A novel drying technology using fiber-based encapsulation

Tutti Foodi has developed a novel drying technology which can encapsulate fresh fruit, vegetables and herbs to retain their maximal nutritional value. The process involves a dietary fiber from natural origin that acts as a carrier for foodstuffs and allows fresh products to dry into a stable, ambient form – without the need for preservatives, additives or extra sugars. NutritionInsight spoke to Lisa Rotteveel, Product Manager, on the floor of PLMA in Amsterdam. The technology can be used to reduce food loss for farmers, as well as to produce tasty products such as powdered beverages.
